While Essent President & CEO Eric Alessi is best known for bringing business and technology together, he's pretty darn good at bringing bacon and eggs together, too.
The closet gourmand, chef's coat and all, cooked his famous huevos rancheros for Essent staff today (Friday, Feb. 12, 2016). The dish is a sunny-side-up egg, avocado, bacon, homemade BBQ sauce, and homemade crema wrapped with love in a cheesy tortilla.
